Bacon & Mushroom Frittata

  • ingredients:
  • 100g butter
  • 125g KR Castlemaine Bred Free Range Short Cut Bacon, diced
  • 80g KR Casltemaine Bred Free Range Shaved Leg Ham, diced
  • 200g cup mushrooms, sliced
  • 1 medium red onion, diced
  • 2 handfuls of spinach leaves
  • 100g sun dried tomatoes
  • Beat 8 x 70g eggs & ½ cup (125ml) light cream in a bowl
  • method:
  • 1. Preheat oven to 180˚C

    2. Brush square 20cm x 5cm deep pan with oil and line the base with baking paper.

    3. Melt butter in a large frying pan; add bacon, ham, mushrooms, and onion. Stir over a high heat for 4-5 minutes.

    4. Add tomatoes and spinach reduce heat; cook for further 2-3 minutes.

    5. Stir into beaten egg mixture and pour into pan and bake in oven for 25-30 minutes or until frittata is set.

    6. Cool slightly before carefully lifting from pan.
