Rack of Pork With A Pesto Crust

  • ingredients:
  • 1 KR Castlemaine So Tender! Pork rack roast (with 5-6 cutlets), rind removed
  • 1 cup basil pesto
  • 1 cup parmesan cheese, grated
  • 1 cup fresh bread crumbs
  • 1 tbsp olive oil
  • To Serve
  • 6-8 Potatoes halved and crisp roasted
  • Rocket salad
  • Basil leaves
  • Balsamic glaze to garnish
  • method:
  • 1. Pre-heat oven 190°C. Trim pork rack and clean bones. Wrap bones in foil to protect during cooking.

    2. Combine pesto, parmesan, bread crumbs and olive oil in a large bowl and mix well.

    3. Press mixture over the entire surface of the pork, making a thick crust. Weigh the roast, allow 25 minutes cooking time per 500g.

    4. Roast pork in pre-heated oven for the required cooking time.

    5. Allow roast to stand at least 10 minutes prior to carving. Serve with crispy roast potatoes and rocket salad, garnished with basil leaves. Drizzle plate with a little balsamic glaze or basil oil prior to serving.
