Pot Roasted Pork Scotch with Potato, Fennel and Tomato

  • ingredients:
  • 1.5kg - 1.8kg KR Castlemaine So Tender! Pork scotch roast, trimmed
  • 2 tbsp olive oil
  • 4 cloves garlic, halved
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 400g can tomatoes, diced
  • 1 cup white wine or chicken stock
  • 3 bulbs fennel, washed and halved
  • 10 chat potatoes, halved
  • To Serve
  • Garnish with finely chopped parsley.
  • Serve with crusty bread.
  • method:
  • 1. Deep Pan or Slow Cook. Trim pork well, season with salt and pepper.

    2. Heat oil in a large deep pan over medium heat, add garlic. Brown the pork well on each side.

    3. Add herbs, tomatoes and white wine. Reduce heat to a simmer and cook covered for 20 minutes.

    4. Remove lid and turn pork. Add fennel and potatoes, cook for a further 20-25 minutes until potatoes are tender.

    5. Remove roast and allow to rest for 10 minutes prior to slicing. Serve with fennel and potatoes and a little of the cooking liquid.
