Pork Rolled Middle Roast with Roasted Capsicum and Goats Cheese

Use Rolled Pork Middle Roast, keep the rind on!

  • ingredients:
  • 1x1.5kg KR Castlemaine So Tender! Pork roast, rind on
  • 2 red capsicum, roasted
  • 200g goats cheese, cubed
  • olive oil
  • flaked salt
  • To Serve
  • Roasted potatoes and vegetables or your favourite salad
  • method:
  • 1. Pre-heat oven to 220°C. Remove the bands from the roast, open out the pork laying rind side down on a chopping board.

    2. Remove the skin from the capsicum, cut into wide strips. Lay capsicum along the length and sides of the roast.

    3. Lay the goats cheese along the centre of the roast. Roll to enclose cheese, replace bands to secure the shape.

    4. Score the rind carefully using a sharp knife. Rub surface with oil and dust with flaked salt.

    5. Place the pork into a baking dish rind side up and cook in the pre-heated oven for 20 minutes, then reduce oven to 180°C for 25 minutes per 500g. Allow roast to stand for 5-10 minutes prior to slicing.

    6. Serve hot with roasted potatoes and salad/vegetables.
  • Notes
  • Capsicum and goats cheese may be replaced with spinach leaves and semi dried tomatoes or green olives.
  • Use Rolled Pork Middle Roast, keep the rind on.
