  • ingredients:
  • 600g KR Castlemaine So Tender! Pork stir fry strips
  • 3 tbsp vegetable oil onion, finely sliced
  • 1 onion, finely sliced
  • 4 spring onions, sliced
  • 2 small red chillies, finely chopped
  • 2 eggs, beaten
  • 250g rice noodles, soaked in warm water
  • 100g bean sprouts
  • 2 limes, juiced
  • 1/2 bunch coriander leaves
  • 1/2 cup sweet chilli sauce
  • 4 tbsp fish sauce
  • 1/4 cup roasted peanuts, finely chopped
  • 2 tbsp fried shallots to garnish
  • To Serve
  • Lime wedges
  • method:
  • 1. Pre-heat Wok or Fry Pan. Heat 2 tbsp oil in wok over a high heat, stir-fry pork and onions for 3-4 minutes. Remove from wok, set aside.

    2. Heat the remaining oil, sauté spring onions and chilli 1 minute, add beaten egg to make an omelette. Remove and slice thinly.

    3. Return pork to the wok and toss through the drained rice noodles. Cook tossing frequently for 2 minutes.

    4. Add bean sprouts, lime juice, coriander leaves, sweet chilli sauce, fish sauce and sliced omelette. Heat through tossing frequently 2-3 minutes.

    5. Serve hot garnished with roasted peanuts, fried shallots and lime wedges.

  • Fried tofu and prawns can also be added to this dish.
  • Use Pork Stir Fry or sliced Tenderloin.
