Pork Madras Curry

  • ingredients:
  • 4 KR Castlemaine So Tender! diced pork
  • 1 tbsp oil
  • 1 onion, sliced thinly
  • 1tsp garlic minced
  • 100g madras curry paste
  • 400g can tomatoes, diced
  • 1 cup chicken stock
  • 2 potatoes, peeled and diced
  • 400g can chickpeas, drained
  • To Serve:
  • Basmati rice
  • Cucumber and mint raita
  • Roti bread
  • method:
  • 1. Pre-heat Wok. Fry Pan or Slow Cooked. Heat oil in a large deep frying pan over a medium high heat, brown pork, onion and garlic well for 4-5 minutes.

    2. Add curry paste to pan, cook stirring for 2 minutes.

    3. Add the tomatoes and chicken stock, reduce heat, simmer for 25 minutes covered, stirring occasionally.

    4. Uncover and add potatoes and chickpeas. Continue to simmer uncovered for a further 20-25 minutes until pork is tender and potatoes are soft.

    5. Serve hot accompanied with steamed basmati rice, cucumber and mint raita and warm roti bread.
  • Notes:
  • This curry is quick and easy to prepare and can be cooked in your slow cooker. For a delicious difference exchange the madras paste with tikka marsala and chickpeas with spinach leaves.
