  • ingredients:
  • 4 KR Castlemaine Bred Free Range King Henry Pork Cutlets, trimmed, rind removed
  • 1 cup plain seasoned flour
  • 2 eggs
  • 1/2 cup water
  • 2 cups fresh breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • 1 lemon, zested
  • 4 tbsp french mustard oil, for shallow frying
  • method:
  • 1. Pre-heat oven to 170ÂșC.

    2. Dust cutlets with flour.

    3. Whisk eggs & water in a medium bowl.

    4. Combine breadcrumbs, parmesan, parsley & lemon zest in a bowl and mix well.

    5. Dip each cutlet into egg mixture, coat in breadcrumbs, pressing firmly

    6. Heat oil in fry pan. Fry each cutlet until golden. Place onto baking tray lined with baking paper.

    7. Bake cutlets for 10 mins.

    8. Spoon mustard into the centre of a plate, top with a mound of coleslaw and the pork cotteleta.
