Moroccan Spiced Pork

  • ingredients:
  • 500g KR Castlemaine So Tender! Pork strips
  • 2 tbsp oil
  • 1 tsp chilli paste
  • 30g moroccan dukkah
  • 200g pumpkin, peeled and cubed
  • 2tsp ginger, grated
  • 150g baby green beans
  • 1/4 cup water
  • 1/4 coriander leaves to garnish
  • To Serve
  • Cous cous
  • Wedges of lemon
  • method:
  • 1. Pre-heat wok or frying pan. Place pork into a medium bowl and toss together with 1 tablespoon of oil and chilli paste, coating well.

    2. Sprinkle over the dukkah and coat well.

    3. Heat remaining oil in a large frying pan or wok over a medium high heat. Brown pork well a little at a time. Remove and set aside.

    4. Add pumpkin, ginger, beans and water to the pan, cook covered for 10 minutes. Return pork to the pan and continue to cook for a further 10 minutes.

    5. Garnish with coriander leaves and serve hot with cous cous and lemon wedges.

  • There are several kinds of dukkah available: pistachio, macadamia or cashew nut, seasoned with aromatic Turkish spices.
  • Also use Pork Stir Fry or sliced Tenderloin.
